Flourless Chocolate Cake
13oz chocolate
12T butter
6 large eggs separated
Line bowl or double boiler with butter, top with chocolate set over 1 inch boiling water to melt chocolate.
In the meantime beat your egg whites until stiff then beat your egg yolks until creamy.
Once chocolate is melted whisk until combined with butter. Add chocolate to egg told 2tbs at a time up to quarter of a cup to temper the yolks then pour chocolate egg mixture into the rest of the chocolate. Fold in egg whites until lumps are got. Be gentle!
Pour into either 10 inch spring form or (6) 4 inch spring form pans. Garnish with chocolate whip and chocolate ganache
