Pineapple Chutney
10 lbs diced pine apples
4 yellow medium diced onions
3 T garlic minced
10 Jalapeños quartered and sliced *keep seeds
4 cups dried cranberries
1lb of brown sugar
2 cups apple cider vinegar
5 T crushed red pepper
5 T Cayenne
~Sauté onions, jalapeños, garlic, cranberries, oil for about 1 min until translucent
~Add pineaples and cook for another minute or so
~Add vinegar and sugar and simmer until almost dry
